An incredibly round cherry was the starting point for this stunning creation, whose small ball-shaped elements hold huge yet perfectly balanced flavours.

FOUND THIS amazing cherry in Portugal; it was so round that I joked you could play ping-pong with it! It basically started the idea to make everything a ball.

 

For this, I chose a completely modern approach. I introduced crab meat, marinated with a little spice, in the form of the golden balls, and a mayonnaise. The third main element is the Parmesan, sourced from Modena in Italy where it was aged for 36 months. Like the crab, the Parmesan mousse was placed in a silicon mould to achieve the round shape. The cheese also forms the Parmesan cream and the Parmesan chips, which I placed on top of the balls.

 

As well as a cherry caramel, a glistening marinated cherry sits atop a round base of cherry balsamic jelly (as balsamic ties in with all the ingredients individually), in a pretty ‘ball garden’ whose presentation is surpassed only by the completely different yet utterly complementary flavour of its contents.
